If you’ve ever tried to clean a box or rasp-style grater with a regular kitchen sponge, it probably ripped to shreds. (And did a lousy job to boot.) Turn to the Japanese-made Tsuboe, a double-sided sponge that painlessly and efficiently cleans both the fine teeth and main body of all kinds of graters, including paddle models. Scrub the blades with the bristled nylon side to remove residue and stuck-on bits—think sticky garlic, fibrous ginger and tacky cheese—without destroying the material. (The bristles also double as a good vegetable scrubber.) Flip it around to the spongier side to clean the rest of the grater’s body. Tsuboe designed the sponge with a three-layer structure to create lather and foam retention, so a little soap goes a long way. When you’re done scrubbing graters, serveware or vegetables, place the sponge on a drying rack for quick drainage and sanitary drying; the middle slit lets you prop it up on most narrow rungs.
