Based in Waitsfield, Vermont, 5th Quarter takes a nose-to-tail approach to butchery that lives up to their name. While living in Rome, founder Josh Turka first heard about “quinto quarto,” a term for off-cuts like tongue, tail and tripe. It literally means “fifth quarter” and comes from the way meat was distributed in ancient Rome: The first quarter of the animal (with all the best cuts) was reserved for the nobility, the second was for the church, the third went to the bourgeoisie and the fourth to the army. The poor and working classes were left with offal and scraps, which they jokingly called the “quinto quarto.” Today, 5th Quarter aims to bring high-quality, locally-sourced meat to the masses while using every part of the animal.
