Flavor

In Tuscany, Antonio Mattei has been baking their famed biscotti since 1858—and little has changed in the recipe over 168 years. Each batch begins with a simple wheat flour dough, made traditionally without any butter or oil. Hand-shaped into rustic loaves, the dough is twice-baked and sliced warm to achieve the crunch that defines true biscotti. (This is not the mass-produced stuff you’ll find at an Italian corner store.) We’re offering three of Mattei’s signature flavors. Classic Almond keeps it simple with chopped almonds and pine nuts for a subtle sweetness and roasted nutty flavor. The Dark Chocolate version swaps nuts for generous chunks of bittersweet chocolate, which yields more of a tender crunch. And Pistachio—which we found to be the most delicate and crisp of the bunch—pairs pistachios with whole almonds for a pronounced earthy nuttiness. Unlike the oversized, crumbly varieties we’ve tried in the States, these biscuits have a sturdy core intended for dunking into espresso, coffee or tea. Each batch is packed by hand and tucked into Mattei’s signature cobalt blue bag with a hand-tied ribbon.

Antonio Mattei’s Legacy

Antonio Mattei’s Legacy

When Antonio Mattei opened his bakery in Prato, Tuscany, in 1858, he set out to perfect almond biscotti. His recipe soon earned international acclaim, winning awards at the exhibitions in Florence, London and Paris. The bakery became so beloved in Prato by the late-19th century that locals affectionately nicknamed it “Mattonella,” a name synonymous with its signature almond biscotti. After Mattei’s death, the business passed to the Pandolfini family, who continue to preserve the secret recipes and traditional methods today. More than 165 years later, Biscottificio Antonio Mattei still operates in Prato, where its biscotti are baked fresh and packed by hand daily.
