This rich, balanced two-ingredient sauce recently won Milk Street’s taste test for the best passata. Its sweet and low-acid profile comes from the Corleonese tomato, a rare heirloom variety grown on Bona Furtuna’s estate in the Sicani Mountains. The tomatoes are cooked with sea salt until they begin to soften, then milled to remove skins and seeds. This process skips the second cook that overly thickens—and dulls—most canned or tubed tomato products. (Plus, it’s bottled in a glass jar, so there are no tinny or metallic aftertastes here.) Instead, you’ll get a brighter and fresher flavor and a smooth, pourable texture that’s entirely customizable. We mix the passata with olive oil and salt to make a simple pizza sauce or use it as a base for quick weeknight pasta.

Passata is a smooth, seedless tomato purée with a fresh, aromatic flavor and versatile consistency. Simmer it down for a rich, thick tomato sauce. What is Passata?

Passata is a seedless, skinless tomato purée made by blending and straining tomatoes. It is distinct from other counterparts: Tomato sauce is cooked and seasoned; tomato paste is cooked down for hours to a concentrated thickness; and purée falls in between, briefly cooked but not overly reduced. Because passata isn’t cooked down, it boasts the freshest, brightest tomato flavor of the bunch.
