From there, Tyler riffs. That’s exactly how we structured this livestream cooking class with Tyler. Our classic recipe had to be their Chocolate Chocolate Chip, of course. In making this flavor, you’ll learn to make the ice cream base that underpins all Salt & Straw recipes. A self-professed science nerd, Tyler will tell you all about how precise ratios of water, fat, milk solids and sugar interact with one another to produce the lush, scoopable texture we’re after. You’ll learn to make what the Salt & Straw folks call a “Chocolate Mom,” the simple homemade syrup that ensures your chocolate incorporates smoothly into the base. As that batch churns, we switch into mad scientist mode and make a playful variation that pairs the chocolate base with chunks of chili-spiked homemade peanut butter cups. Not convinced? Tyler Malek is the Head Ice Cream Maker and Co-Founder of the Portland-based Salt & Straw Ice Cream.
