Authentic Norwegian crispbread (“knekkebrød”) is an everyday Scandinavian staple, but a true version can be hard to find stateside. Brooklyn-based bakery Norwegian Baked bridges the gap. Founder and Oslo native Hedvig Bourbon makes her thin, delicate crispbreads from a decades-old family recipe. Baked fresh in small batches, the knekkebrød have a light, satisfying crunch from organic rye and oats packed with pumpkin, sunflower, flax and sesame seeds. These became a fast Milk Street office favorite, so we’re bringing you three flavors we couldn’t stop snacking on. The Sea Salt crispbread balances a naturally sweet, roasted nuttiness with pops of briny sea salt. Chili and Coriander has a savory depth boosted by citrusy coriander and warm (but not-too-spicy) heat from chili flakes. And Rosemary and Lemon offers a bright, aromatic blend of piney rosemary and a subtle lemony tang. Enjoy them straight from the bag as a fiber-rich snack or paired with your favorite dips, spreads, cheeses and jams.
