Vinagres de Yema’s Spanish sherry vinegar is sweet, complex and just tangy enough. Aged in 100-year-old oak barrels for a full year, it has a subtle, earthy smokiness from the oak, plus the classic raisin notes that define a good aged sherry vinegar. But it’s much more complex than other aged bottles: It’s made via the traditional solera aging process, or when small amounts of finished vinegar is left in each oak barrel after draining to “seed” the next batch. (Sort of like a sourdough starter, but for vinegar.) This solera system is 25 years old, which means that every bottle carries a quarter century’s worth of history and complexity. Produced and aged in the Jerez region of Spain in accordance with Protected Designation of Origin (PDO) regulations, Cepa Vieja is the oldest, most complex vinegar in Vinagres de Yema’s lineup, making it our choice for any application that showcases its sweet-tart, fruity flavor. We love it in vinaigrettes and pan sauces, drizzled over roasted veggies or mixed into a classic romesco sauce.

We found Spanish producer Vinagres de Yema, who makes bright, complex vinegars using some of the best grapes in the country—including Cepa Vieja, a sherry vinegar made with Palomino grapes sourced from Spain’s Andalusia region.
