Curated exclusively for Milk Street, these variety packs contain either 6 or 9 pounds of Benton’s traditional dry-cured Tennessee bacon in three different cuts. The classic box has 4 pounds of thick-cut classic strips (two hickory smoked and two unsmoked), plus 1 pound each of hand-cut unsmoked lardons and Milk Street-exclusive smoky bacon steaks. The new Ultimate box adds 2 pounds of Benton’s signature pepper bacon strips and an extra pack of the steaks. Each piece is carefully selected to ensure the ideal fat-to-meat ratio, then cured simply with salt, brown sugar and black pepper to bring out the pork belly’s rich flavor and juicy, succulent texture. The unsmoked bacon is all about the pork, with a gentle sweetness that balances the salt and highlights the meat’s natural qualities. The hickory-smoked offerings are, no surprise, seriously smoky, as they smoke low and slow over local hickory logs in an antique wood stove; the aroma will fill the kitchen the second they hit a hot skillet. Benton’s pepper bacon does not disappoint: It’s wickedly peppery, with large pieces of cracked black pepper coating the edges of each strip. The steaks and lardons are generously cut and have a dense meatiness that holds up to longer cook times, giving you plenty of time to render out all that incredible fat. As for the strips, we love frying them up for a classic breakfast or the best BLT of all time (the pepper bacon is especially good here), but they’re also hefty enough to cut into mini-lardons for stir-fries and braises. Each Benton’s x Milk Street Bacon Box comes with two 1-pound packages of hickory-smoked bacon strips, two 1-pound packs of unsmoked bacon strips, one 1-pound pack of hickory-smoked bacon steaks and one 1-pound pack of unsmoked lardons. The new nine-pound Ultimate Bacon Box has all of the above, plus two 1-pound packs of Benton’s seriously peppery Pepper Bacon strips and an extra pack of the steaks. Each box is packed by hand just a few feet away from the smokehouse, so the bacon practically goes straight from the smoker to your doorstep. The meaty hickory-smoked steaks can be cut into any size and shape you like, adding extra texture and heft to our Stir-Fried Kimchi with Bacon and Japanese Fried Noodles with Bacon and Cabbage. Benton’s has been around since 1947, when a Tennessee dairy farmer started selling country hams from a painted block building. Current owner Allan Benton, who learned to cure and smoke pork from his grandparents in southwest Virginia, took over in 1973. Today, Allan and his son, Darrell, still run the operation from a small smokehouse in the foothills of the Great Smoky Mountains. Their decades-long craftsmanship has turned Benton’s into one of the most recognized names in American bacon and country hams.
