Made from fresh-pressed cider that contains over 30 varieties of apples, Quincannon’s heirloom vinegar is one of the very few that retains a true apple flavor, even after fermentation. During testing, we used it to whip up a simple vinegar-based barbeque sauce and were delighted at how noticeably apple-y the finished product was. Quincannon started as a rescue mission for an abandoned organic apple orchard, and you can taste the care (and terroir) in every drop. The sheer complexity of flavor at play here is what sets this vinegar apart; it’s tangy, of course, but the acidity is balanced by a pleasant sweetness and surprising depth from the heirloom fruit, all of which is grown, picked, pressed, fermented and bottled on the family farm. Even the bottle design is original; founder Ali Quincannon was inspired by antique apothecary bottles, which call to mind the health benefits of pure apple cider vinegar. And until now, this ACV was impossible to source outside of a few retailers in southern Maine.

To Make Cider Vinegar from Scratch, You Must First Revive an Orchard

In 2014, Bryan and Ali Quincannon moved their family from New Jersey to Maine with a full camper and zero intention of becoming stewards of an organic apple orchard. But when a new friend clued them in to a fixer-upper farmhouse for sale that came with 26 acres of unlabeled apple trees, their plans changed. Just over a decade later, they’ve restored the abandoned organic orchard using environment-first farming methods that preserve and improve their land’s biodiversity. Their rare heirloom apple varietals are highly sought after by locals, and the Quincannons put every last piece of fruit to use in their fresh ciders and slow-fermented cider vinegars.
