The process of making tea in Morocco is called “atai.”

It’s traditionally a man’s job to prepare it in front of guests and then pour it from a long-spouted carafe from a height of at least 12 inches. That’s enough agitation for the tea to foam, a sign it’s finished brewing. If there’s no foam, it’s returned to the pot to steep a bit longer.
