This Italian EVOO is cold-pressed from Moraiolo and Frantoio olives (plus a small percentage of Pendolino and Leccino) within 24 hours of harvest, so it’s aromatic and flavorful. It won’t overwhelm you with peppery notes or assault your tastebuds with bitter astringency; instead, it leads with aromas of green apple, eucalyptus, chamomile and freshly-cut grass and an herbal flavor profile of fennel fronds, bay leaves and rosemary.
