Crafted by a 150-year-old miso brewery in Fukuoka, Japan, this hot miso sauce is the ultimate flavor booster. Tsurumiso blends traditional soybean miso and mugi-koji (barley spores) with garlic, chili pepper and sesame—and the result? A slightly coarse, spreadable, spicy-sweet condiment. Unlike other miso sauces we’ve tried, Sumo adds a punch of subtle heat: It starts off sweet and garlicky, followed by bold umami notes and rounds out with a spicy-tang that’s deep but not overpowering.

The convenient squeezable packaging means you’ll use every last drop in stir-fried noodles and vegetables, grilled meat marinades and dipping sauces, where bits of garlic cling onto any vessel. We especially love elevating sandwiches, hot dogs and burgers with a quick squeeze. Sumo Hot Miso is exclusive to the Milk Street Store.

Use it plain as a dipping sauce (we recommend hot pot or French fries) or toss with cucumbers, charred broccoli, tofu and crispy sweet potatoes. Swap barbecue sauce with the hot miso and slather onto pork spare ribs, roasted fish and skewered chicken, like our Grilled Chicken with Soy Sauce Tare. Or substitute peppercorns for Sumo Hot Miso in our Lime-Pepper Dipping Sauce (Tuk Meric).

Along the many canals of Yanagawa—a small, picturesque city that borders the Ariake Sea—you’ll find an old, red brick building home to Tsurumiso. Since the 1870s, they’ve crafted inventive misos (think yuzu, ume plum or Sumo Hot) with Fukuoka-grown rice and barley, less salt and no additives. Their Sumo Hot Miso—a blend of traditional soybean miso and nutty-sweet barley koji mixed with garlic, chili pepper and sesame—won multiple awards at the 2014 Local Miso & Soy Sauce Grand Prix at FOODEX Japan.
