Holy Grail Steak Co. partners with Santa Carota Beef to bring us these incredible cuts. The Petitt family—the third-generation cattle farmers behind Santa Carota—has been feeding their cattle carrots since 1989, but it wasn’t until 2017 that they tried finishing their livestock exclusively on carrots. The farm also upholds sustainable practices, like using recycled carrots from nearby Bolthouse and Grimmway farms (which produce over a million pounds of the veggies per day) and allowing the cows to roam freely in their natural habitat for the entirety of their lives.
