Pomegranate molasses, an indispensable ingredient in many cuisines from the Eastern Mediterranean to Central Asia, is the result of boiling pomegranate juice until it condenses to a concentrated sweet-tart powerhouse. Each bottle of producer Chafic Maalouf’s small-batch version, exclusively sold at Milk Street, is made from the juice of 5 kilos of Lebanese pomegranates using methods that have been practiced for generations. Unlike more common thicker versions, this molasses has a thinner viscosity that spreads rather than sticks when poured, combined with the perfect balance of sugars and acidity. It carries multiple layers of complex aromas and flavors ranging from smoke, tobacco, balsamic, citrus and berries, all engulfed in a subtle, well-rounded sweetness.

Use Maalouf pomegranate molasses when you want to balance out the savory or sweet notes of a dish–much like you might add lemon juice to a dish, but when you also want to provide a background sweet note and complexity. We love it stirred into vinaigrettes like for our Seared Scallop and Arugula Salad with Pomegranate Vinaigrette, added to boost the savory flavor of lamb or beef like in our Rib-Eye Steaks with Rosemary and Pomegranate Molasses, or drizzled over Middle Eastern dips like our Muhammara.

The soil’s mixture of clay and silt, very rich in potassium, calcium and other minerals all contribute to the fruit’s depth of flavor. Capturing the perfect balance of sugars and acidity in the fruit for harvest is a tricky game, requiring a trained person to visit the orchard every morning in September, choose a few pomegranates and taste them to determine if they are ready for picking.
