Yuta Iida, president of kitchenware store Iida-ya on Tokyo’s famous Kappabashi Kitchen Street, designed this rasp grater by researching over 300 models from around the world. After thorough testing—which included adjusting the blade angles in 0.01-millimeter increments until just right—the ultra-sharp and secure Ever Grater was born. Here’s how it stands out: Stainless steel blades are arranged to cut foods in two directions, cutting the time needed for prep in half. The super-sharp grates were meticulously crafted to produce a “fluffy” texture of foods, making it a favorite of acclaimed Japanese chefs. And even after years of using the grater for daily tasks, Milk Street’s Matt Card says it retains the same out-of-the-box razor sharpness as the day he bought it.
