Yuta Iida, president of kitchenware store Iida-ya on Tokyo’s famous Kappabashi Kitchen Street, designed this rasp grater by researching over 300 models from around the world. After thorough testing—which included adjusting the blade angles in 0.01-millimeter increments until just right—the ultra-sharp and secure Ever Grater was born. Here’s how it stands out: Stainless steel blades are arranged to cut foods in two directions, cutting the time needed for prep in half. The super-sharp grates were meticulously crafted to produce a “fluffy” texture of foods, making it a favorite of acclaimed Japanese chefs. And even after years of using the grater for daily tasks, Milk Street’s Matt Card says it retains the same out-of-the-box razor sharpness as the day he bought it.

It’s the perfect length and width to grate hard cheese, ginger, garlic, nutmeg, chocolate, citrus and more directly over pots and pans, mixing bowls or plated dishes. It will never dig trenches into blocks of Parmesan, unlike the too-thin microplanes and wand graters on the market. The comfortable handle provides a secure grip regardless of how much force you put into it. We especially love the rubber grips at the base, which prevent the grater from slipping around.
