When using a wok, mise en place isn’t just about your ingredients—it’s about your tools, too. Draining liquids and oils away quickly while stir-frying, frying or boiling requires sturdy but agile equipment with enough surface area to easily get under your ingredients, while keeping your hands at a safe distance. Milk Street’s Wok Skimmer is custom-designed to work seamlessly with the Milk Street Hammered Wok. This well-built, stainless steel tool features the right handle length and bowl size for nimble and efficient use, unlike flimsy, poorly made tools that aren’t big or wide enough to be effective in a wok. It scoops, strains and drains effortlessly—and excels when used in tandem with the Milk Street Wok Spatula. The satin-finished steel is dishwasher-safe, rust-proof and nearly impervious to wear.
And despite its name, the Milk Street Wok Skimmer is terrific beyond the wok. Its uniquely perforated head makes it an ideal tool for lifting blanched vegetables or deep-fried foods out of hot water and red-hot oil. Or use it to strain delicate stuffed pastas, like tortellini or spaetzle, out of a simmering pot to avoid breaking them. It’s even great for skimming broths and stocks.
Milk Street Saya Knife Guard — Nakiri
Japanese kitchen knives are traditionally stored in wooden scabbards called sayas, which protect the blade—and your fingertips—from damage in a crowded drawer. We partnered with our knifemaker for a custom ash wood saya to be the perfect companion for our Milk Street Nakiri. The sturdy, durable and beautifully grained wood guard perfectly fits the blade (simply sliding on) and attaches securely via a simple wooden pin. The wood also helps wick away any moisture clinging to the blade, which prevents oxidation or rust.
Cuisipro: Box Grater
This box grater features four cutting sides—coarse grate, medium grate, fine grate and slice—all made from etched metal, which increases each blade’s sharpness and durability, and they won’t buckle under pressure. And unlike other brands, which often have a thick frame of metal or plastic between each cutting surface, Cuisipro extends each of their grater's cutting surfaces to the edge: more area means easier slicing, quicker grating and less work, so you can tackle soft foods like certain cheeses and sturdy veggies like carrots with ease. Plus, there aren’t any extra nooks and crannies for bits of food to get stuck in, making for easier cleanup. Nihonichi Premium Tamari
Tamari, the liquid byproduct that results from pressing miso, is so much more than gluten-free soy sauce (a common misconception among American cooks). This premium tamari from Nihonichi is darker, richer and less salty in flavor than the soy sauce in your cabinet, adding layers of umami and a sweet finish—reminiscent of miso—with just a splash. It’s produced in Japan by a revered shoyu manufacturer that traces its roots back to the 1700s. And unlike grocery store brands that may muddy and darken the flavors of your dish, this tamari, naturally brewed in wooden vats, is deeply flavorful and pourable, perfect to add to just about any dish.
Huilerie Beaujolaise Calamansi Vinegar
We absolutely love this small-batch vinegar from French artisanal producer Huilerie Beaujolaise. With a bright and tangy vibrancy akin to tangerine, this vinegar almost tastes like a shrub, or drinking vinegar. Ubiquitous to Filipino cuisine, calamansi is a citrus hybrid between kumquat and mandarin orange.

Poterie Renault Vintage Escargot Dish
Though the region is best known for wine production, the Loire Valley of France also once contained a secret gem frozen in time: Poterie Renault. Dating back to 1847, the French pottery workshop was filled to the brim with stoneware pieces, all handcrafted from some of the richest and finest clay France has to offer. And while the factory shuttered its doors in 2016, it left behind a treasure trove of salt-glazed ceramics that have become collectible items. Included in that collection—reminiscent of charming French country kitchens is this classic escargot plate. Complete with nine wells and an oven-safe finish, the classic piece isn’t just made for serving escargots—try it for roasting mushrooms or storing eggs and fruit. And we keep the classic dish out as a display piece even when it isn’t in use.
Aux Co. Ltd. Gassiri Tongs
Though upon first glance Aux Co. Ltd’s Gassiri Tongs seem just like any other pair, our kitchen team was blown away after testing them. The rounded shape makes it easy to pick up spherical items like meatballs, eggs or potatoes that may run away using a normal pair of tongs. But the sides of these tongs are what really set them apart—one is designed with slits and the other with a scoop that can hold about a tablespoon of liquid. Use the slotted side to strain out unwanted liquid, like when rendering bacon, or use the scoop side to add pasta water to your sauce. Sturdy stainless steel construction—complete with a sufficient handle length—also makes these tongs strong and safe so you can pick up heavy, hot ingredients without any problems. However, they can still be used delicately—they work just as well picking up a strand of spaghetti or a soft boiled egg.
Aux Co. Ltd. Japan Sukueru Knife
This unique serving spoon-knife combo tool is a must-have for serving. Right at the table (or the picnic blanket or the potluck), you can use the serrated edge to cut out your perfect portion of food and then use the dipped bowl of the spoon to easily scoop it into your plate. The concave shape and wider width actually lifts up the food and holds it there—it won’t go tumbling back onto the platter like it would with a classic narrow, triangular server. The blade is sharp enough to cut through pizza crust and it’s ideal for slicing through gooey lasagna without lopping off that top layer of chewy cheese trying to slice and serve. Plus, it’s made from durable, dishwasher safe stainless steel with a satin finish, which is great for camouflaging scratches after frequent use. (And we promise you’ll be using this tool quite a bit.)
Work Sharp Benchtop Whetstone Knife Sharpener
We love whetstones because they work on knives of all kinds—even on other bladed tools like kitchen shears. The aluminum oxide stone has two levels of grit: Premium 1000 grit sharpens and restores your knife’s edge, while the 6000 grit refines and polishes the edge to finish. It works fast and is long-lasting, plus the sharpening base provides stability, scratch prevention (it’s equipped with nonskid feet) and better water control, which makes for easier cleanup after you’re done. We also really like that this whetstone comes with adjustable angle guides, which makes the whole process easier on the user. It comes with guides for both 15 degrees, which works for Eastern-style knives, and 17 degrees (which we’re partial to, since that’s the angle of most of our Milk Street knives).

Cerámica Muñoz 8-Inch Terracotta Clay Cazuela - Set of 2
Crafted by hand, this set of two clay dishes are produced in the village of La Rambla in southern Spain, an area with 4,000 years of pottery tradition. Made from red clay collected in the Spanish cities of Zamora, Valencia and Teruel, each dish is shaped and dried in the Spanish sun before being fired in a 1832℉ oven. The 8-inch diameter and low sides make them the perfect size for individually served dishes and tapas. Unlike some terracotta tabletop items that cannot withstand high temperatures, these cazuelas can handle a slow, steady heat, so foods cook gently and evenly. Use them in place of a skillet over medium heat, a paella pan, a sauté pan or oven casserole. Each glazed piece is one of a kind and may come with slight variations.
