Maalouf Authentic Extra-Virgin Olive Oil
Stone-milled exclusively from a single grove of small, slender Souri olives grown in North Lebanon, Maalouf's early-harvest oil possesses a potent green-yellow color and a buttery, rich flavor with hints of green apple and artichoke. It has a subtle peppery kick and addictively long, nutty finish. This is truly an all-purpose, extra-virgin olive oil without the overpowering bitterness that mars many other brands. We have a very limited inventory of this small-batch oil; once we're sold out, we can't get more until next year's olive harvest.
Milk Street Közmatik
When a recipe calls for charring vegetables, what do you do? Well, you can fire up the grill but that is a lot of work for just one eggplant or two bell peppers. In Turkey, however, they have a better solution called the Közmatik, a metal disk that fits perfectly over the burner of a gas stove. Evenly spaced holes allow heat to circulate around the vegetables, so you are truly roasting, rather than searing as you would on a skillet. The holes are close enough to hold even small veggies, like slender spring onions, and the disk is large enough to keep several bulbous eggplants from rolling off. It’s also less messy than charring directly on the burner: The Közmatik catches nearly all of the bits of charred vegetable skin and juices that would leak onto the surface of the stove. And, once cooled, it can be thrown in the dishwasher for easy cleanup.

What if we told you there is a Japanese knife specifically designed for vegetable prep that will make your cooking safer, easier and faster? It is vastly better than the all-purpose European chef’s knife, which is clunky, heavy and too thick to precisely slice and dice onions, cut carrots into perfect coins or reduce chard into feathery ribbons. The solution is the Milk Street Nakiri. It’s light, thin and sharp, with a design that resembles a mini cleaver—2 inches deep with a squared-off tip. However, it usually requires the hassle of hauling out the food processor—and finding the shredding attachments, or using a box grater, which will tear at your knuckles if you’re not paying keen attention. Graza Co. Squeeze "Drizzle" and "Sizzle" Olive Oil Set
Enjoy the best of both worlds with Graza’s “Drizzle & Sizzle” combo pack of extra-virgin olive oils. Grown and made in Jaen, Spain, the country where about half the world’s olive oil is produced, Graza uses 100% picual olives for both their blends of extra virgin olive oil. But with a bit of German engineering, this problem is solved. Topfi’s Lid Holder, made of pure stainless steel, attaches to virtually any pot to provide a convenient and sturdy spot to store your lid when not in use. Small but mighty, it was a hit during testing with everyone in our kitchen. Aux Co. Ltd. Gassiri Tongs
Though upon first glance Aux Co. Ltd’s Gassiri Tongs seem just like any other pair, our kitchen team was blown away after testing them. The rounded shape makes it easy to pick up spherical items like meatballs, eggs or potatoes that may run away using a normal pair of tongs. But the sides of these tongs are what really set them apart—one is designed with slits and the other with a scoop that can hold about a tablespoon of liquid. Use the slotted side to strain out unwanted liquid, like when rendering bacon, or use the scoop side to add pasta water to your sauce. Sturdy stainless steel construction—complete with a sufficient handle length—also makes these tongs strong and safe so you can pick up heavy, hot ingredients without any problems. Designed for steaming food, the Marna Piggy Steamer from Japan is a silicone lid that forms a tight seal over pots and containers, vents excess steam through its snout and is easy to lift by its ear-shaped handles. Use it for perfect stovetop steaming, splatter-free microwave cooking or even refrigerator storage in place of plastic wrap. This unique serving spoon-knife combo tool is a must-have for serving. Yokofuku “More More Garlic” Teriyaki Sauce
An exclusive Milk Street staff favorite and chock-full of Japanese-grown garlic, Yokofuku’s “More More Garlic” Teriyaki Sauce brings bold, sweet, garlicky flavor to just about anything you add it to. Planted in mid-September in Kagoshima Prefecture, an area with active volcanoes that makes for the most fertile soil, the garlic in this sauce is harvested in early June and combined with soy sauce from the Kyushu region, mirin, sesame and oyster sauce for a punchy, thick final product. Right upfront you’ll taste salty soy combined with pungent garlic, then notes of sweet, nutty sesame, plus a little bit of acid and funk from the mirin and oyster sauce. Use this delightfully textured sauce as a marinade or dipping sauce for barbecued meats, roasted veggies and tofu; toss with noodles and rice or add for an instant flavor booster to soups.
Christopher Kimball for Kuhn Rikon Ratchet Grinder
Most pepper mills (this model also grinds spices) take forever to grind just one tablespoon. This new design—which we developed with Kuhn Rikon—is easy to use and produces all the spice you can use quickly and easily. Its innovative back-and-forth ratchet action is easier than a twist-style mill, especially for those with hand issues. The precision ceramic grinder is effective and durable, and the front-loading hopper is far easier than top-loading grinders, where half the spices inevitably spill during filling. Haeoorim Jeju Korean Fish Sauce
For those put off by the typical pungency of fish sauce, Haeeorim’s Jeju Korean Fish Sauce—a milder, less funky take on the classic staple—may be just the thing. Caught in the waters off of Korea’s Jeju Island by local fisherman, a combination of young and horse mackerel marinate in salt crystals from Jeju before being expertly sealed in traditional Onggi (Korean earthenware pots) for more than a year. After the initial fermentation, a mixture of locally-grown daikon radish, sea kelp from Wando and local mandarin orange are added to the Onggi to add interesting notes of flavor, complexity and a bit of sweetness. After another period of aging and ripening, the resulting sauce is clean without the funk of typical fish sauce— thanks to milder mackerel, a less pungent option than the anchovies typically used for fish sauce, and longer fermenting—yet still full of meaty fish flavor. With a little more sweetness and a lighter touch of salt than most other brands, this fish sauce lends itself beautifully to a variety of dishes, from noodles and vegetables to sauces and marinades.

Milk Street Cleaver
Every cook needs a big, burly knife for the tough stuff. A big chuck roast to turn into stew meat? A soccer-ball sized cabbage to shred for coleslaw? Chicken legs need splitting? Tasks like these make most knives feel puny and insignificant.
Sometimes, you just need a big knife for kitchen tasks, but they often feel heavy, clumsy and downright unsafe in the hand. Often, the blades are ultra-thick—for only brutish, heavy-duty tasks—or are designed with unique blade shapes, which require a learning curve to master. Or, they have stubby handles barely long enough to grip.
Enter the Milk Street Cleaver, an all-purpose knife designed to work equally well for vegetables and butchering big cuts of meat. At 7 inches long, 3 inches tall and less than half a pound, this tool is an inch shorter than the average cleaver for a lighter, more nimble experience. However, it maintains full height for shielding fingers during chopping and using as a bench scraper to scoop up and transfer prepped foods to the pot. And, at only 2 millimeters thick at the spine, this cleaver is as thin as possible to maintain stiffness, yet slices with little force.
Unlike most cleavers that feature a basic rectangular blade design, the Milk Street Cleaver boasts some distinctive design points. The blade arcs inward at the heel to allow for multiple grips, while keeping your fingers guarded and preserving the length of the blade. To feel and function like a smaller knife, the cutaway heel lets you choke up close and tight on the blade. Or slide your hand back on the handle for more clearance, leverage and power.
