Although it may look like one, Earlywood’s Large Flat Sauté tool isn’t exactly a spatula—it’s much better. The simple design gently tapers from the handle down to the slanted tip, which has a thin, nimble edge that excels at turning, flipping and scraping. Like most of Montana-based Earlywood’s tools, the Large Flat Sauté is crafted specifically for cast-iron use; the sold wood construction and angled edge are tough enough for thorough scraping, which helps prevent food and oil from building up on the surface and flaking off. But you can use this tool in any kind of pan, from stainless steel skillets to carbon steel woks to enameled Dutch ovens. Its broad, slanted shape is excellent for agitating stir-fries, while the almost-sharp front edge does a great job at flipping eggs and loosening fond for braises and pan sauces. It’s also the perfect utensil for cutting into lasagna, quiches and casseroles because, unlike sharp metal tools, the wood won’t damage the finish of your baking dishes. And if you buy two, you can use them as salad tongs. Available in Jatoba or Hard Maple wood.

We grab the Large Flat Sauté for agitating stir-fries and fried rice, like our Char Siu Fried Rice or Indonesian-Style Stir-Fried Red Chili Tofu with Peanuts. It also does a great job of scraping up fond and gently cutting and serving big slices of lasagna or quiche. Or pick up two and use them as salad tongs.

Hand-wash only with hot soapy water, using a scour pad or the scratchy side of a standard kitchen sponge. Oil liberally with food-safe wood oil when the scraper looks dry. Do not soak or put in the dishwasher.
