No other material allows you to whip up lush, stable peaks of meringue quite like pure copper, and that’s exactly what this bowl is made from. Beyond meringue, we love it for all kinds of baking tasks, from creaming butter and whipping cream to mixing batters and frosting. (It makes excellent mashed potatoes, too.) Plus, it’s built to last: The copper is hand-hammered for a polished finish and increased durability and hardness. Its handles are tungsten inert gas (TIG) welded for unmatched sturdiness too. Like all of Sertado’s products, this pan is made from 100% pure recycled copper, responsibly sourced in Mexico and finished by hand in Austin, Texas.

Copper is famously the best material for whipping up stable, lofty meringues, like the toppings for our Romanian Rhubarb Meringue Cake and S’Mores Bars with Marshmallow Meringue. It’s also excellent for mixing up a batch of light, delicate Whipped Cream Cake.

This bowl measures 10.375 (10 ⅜) inches from point to point on the arms and will fit any 6-, 7- or 8-quart KitchenAid lift mixer with matching measurements. It is not compatible with tilt-head style mixers or 5-quart lift mixers that measure 9 inches from point to point. Double-check your mixer’s measurements to ensure compatibility.

This bowl is pure, unlined copper, so do not use it with acidic ingredients. Hand wash with warm water and mild dish soap. Dry immediately with a soft, clean cloth. Avoid harsh detergents, abrasive cleaners and dishwashers. Over time, the copper will naturally develop a patina, and because this bowl is not lined, it can rub off on food. Be sure to regularly polish the interior surface with a copper-specific polish or a homemade paste using lemon juice and salt. Gently rub onto the surface with a soft cloth, rinse thoroughly and dry immediately. For the bowl’s exterior, you can choose to maintain the shine or embrace the patina.
