Caramelo tortillas are the only ones Chris Kimball eats at home—and once you try them, you’ll see why. We just received an all-new shipment of their corn tortillas for the season. Not too thin or thick, chewy yet tender and almost impossibly flavorful, these are fresh-ground corn tortillas at their best. Unlike the dry pre-packaged masa powders used by run-of-the-mill brands, Caramelo starts with non-GMO yellow or blue corn kernels that undergo nixtamalization. It’s an ancient process of soaking kernels in an alkaline solution—water and food-grade lime—to soften the corn and increase moisture retention. The kernels are then stone-ground in house using a volcanic stone mill. Made with just corn, water and sea salt, the thin and pliable tortillas easily cradle heavy fillings without crumbling. The short ingredient list lets the rich flavor of the corn shine through; these tortillas aren’t a mere vehicle for toppings, they’re the star of the show. Expect a subtle toasty sweetness from the yellow corn tortillas and a robust, earthy savoriness from the blue ones.

We’re offering a bundle of both yellow and blue 6-inch corn tortillas that are ideal for tacos, enchiladas and chilaquiles. Each box contains three 12-piece packs of yellow tortillas and three 12-piece packs of blue tortillas (72 tortillas total). Caramelo tortillas are hard to find as they sell out at specialty stores across the States quite fast, and lead times on orders placed directly through the company’s website start at four weeks. Milk Street is currently the only retailer selling these corn tortillas online, allowing us to offer this curated bundle in bulk, with shorter shipping times.

Net Weight/Volume: Note: Each box has a total of 72 tortillas. Bundle includes:

  1. Three packs of twelve 6-inch yellow tortillas
  2. Three packs of twelve 6-inch blue tortillas

Place of Origin: Lawrence, Kansas

To reheat your corn tortillas, preheat a cast-iron skillet or comal over high heat until lightly smoking. Place a tortilla in the pan for a few seconds, just until it starts to sizzle and blister. Flip it over to heat the other side and you’re ready to eat. We love these tortillas for our Single-Seared Garlic Shrimp Tacos, piled high with chili-garlic shrimp and a citrusy cabbage slaw. They’re the ideal size (and texture) for cheesy enchiladas, like our weeknight-friendly Cheese Enchiladas with Salsa Roja. Maybe our favorite application, though, is making the ultimate breakfast taco tortilla. You can keep it classic with scrambled eggs, chorizo and salsa verde—or go all out with griddled pork belly, scrambled eggs, sliced avocado, cotija cheese and fresh cilantro, all doused in our Green Chili and Tomatillo Hot Sauce.

Refrigerate or freeze upon receipt. Because these tortillas contain zero preservatives and very little salt, they’re best enjoyed within 10 days of refrigeration or within three months when frozen.

Real-Deal Tortillas, Made in Kansas

Real-Deal Tortillas, Made in Kansas

Caramelo owner Rubén Leal grew up in Hermosillo, Sonora, where translucently thin, richly flavorful flour tortillas are a staple. After relocating to the U.S., he found that the further he got from the Mexican border, the worse the tortillas tasted. So he started making his own, by hand at first, then using his mother’s electric tortilla press. What began at farmers markets grew into an operation producing 15,000 tortillas a day for chefs and speciality grocers alike. More recently, Leal turned his attention to corn. He spent months refining the nixtamalization, grinding and cooking processes to create thin, fragrant tortillas sturdy enough to hold plenty of filling.
