The sauce is made with floral, citrusy Sichuan peppercorns, which are technically not a peppercorn at all, but a type of prickly ash.

HOW TO USE

Use it as a tableside condiment for stir frys or rice bowls, toss with chewy ramen noodles, drizzle over simple vegetables and use, of course, splash on your favorite dumplings. Try it on blanched bok choy or chard leaves, or even on fried eggs over rice.
