Made by hand with nothing but Jordanian Medjools and water, this intense date molasses adds a deep sweetness to just about anything. Where other date molasses products overly rely on sugar and citric acid, this version is rich with the distinct caramel-like flavor of real dates. Its superior quality is thanks to Kamā’s old-school methods: Rather than using mechanical extraction and filtration processes, their team of woman artisans make this molasses the way it’s been done for thousands of years. They boil plump, high-quality dates in water, then manually wring them through towels, squeezing out every last drop. That liquid is then boiled down until it’s thick and syrupy—the perfect viscosity for drizzling over yogurt, tahini, ice cream, grilled veggies, salads and seared meats or stirring into tea or latte. It’s like honey or maple syrup, but a bit more special—and thankfully, a little goes a long way.

While there’s no wrong way to use Kamā’s handcrafted date molasses, we hope you consider mixing up a frosty glass of jallab. This traditional drink consists of date (or grape) molasses and rosewater poured over lots of crushed ice, sometimes garnished with a sprinkle of raisins or pine nuts. Jallab is especially popular during Ramadan and hot summer days, as it’s sweet, complex, refreshing and dead simple to make.
