Picuals are known for their high proportion of polyphenols, which are the compounds that make the Finishing olive oil assertive, sharp and peppery; pressing the olives early in the season preserves as much of their polyphenol content as possible, contributing to the oil’s terrific flavor profile. A small finish of the potent oil sets off grilled meats, roasted veggies, soups, pasta dishes and even fresh stone fruit. Milder than its early-harvest sibling, the Everyday oil is flavorful, as smooth as butter on the palate and offers subtle hints of fresh almonds, which introduces complex notes.
