Spiced with warm ginger, clove and cinnamon, these authentic gingersnaps (pepparkakor) come from Nyåker, a small village in northern Sweden. They’re warm and gently spiced, with a mellow sweetness and earthy depth—there’s no overwhelming ginger flavor, just lingering toasty aromatics. True to their name, the cookies are thin and crisp with a satisfying snap, yet porous enough to soak up a hot beverage when dipped. The top-secret recipe hasn’t changed since 1952, when teenage brothers Bengt and John Åström began baking gingerbread in their family’s kitchen. Today, the spices are still blended by hand and the dough is punched out with bronze rolls, making the cookies about as close to homemade Scandinavian pepparkakor as you can get. Enjoy them on their own, alongside a cup of coffee or tea (or mulled wine, like a true Swede) or served on a holiday charcuterie board. They’re sturdy enough to pack in a lunchbox and crumble over ice cream for a low-effort dessert. Each batch is packaged in a large collectible red tin, patterned with traditional Scandinavian folk florals.
