An outdoor pizza oven is a must for the serious home pizza maker. The problem? Most are too small, wimpy and erroneously designed to turn out the Naples-quality pies we aspire to create. That ends with Witt’s Etna Rotante oven, whose generous size, dual gas burners and intuitive controls make it easy to dial in every bake for pro-level results. On top of its large capacity—the stone is 16 inches in diameter, big enough for parlor-style pizzas—three key features set this oven apart from others we’ve tried. First, it has a battery-powered rotating stone so you don’t have to stand at the oven with your peel, constantly turning to ensure an even (and burn-free) pie. Second, there is a gas burner underneath the pizza stone, which solves the problem of undercooked bottom crusts for good. Finally, there is a ring of burners above the pizza that cooks the top crust as it turns. Since the stone turns automatically, every square inch will get the same heat exposure. It’s some serious heat, too: Once the burners are lit, the Etna Rotante reaches a ripping 950°F in about 15 minutes and its dual-layered insulation retains that heat with ease. To fine-tune the temperature, just twist the burner knobs and check the advanced heat sensors. It’s even easy to clean; the stone comes out entirely (once it’s fully cooled) so you can wipe down the stainless steel interior with a soft cloth and some mild cleanser. To ignite a burner, depress and turn the on/off button slowly counterclockwise until you hear a click and the burner ignites. This will take about 8-10 seconds, as the gas has to travel through the burner pipe to the oven and around the burner from one side to the other. Keep holding the on/off button in for 10 seconds after ignition, then release the button. Turn the button to set the burner as desired. If the burner does not turn on, leave the button in the off position and wait five minutes before trying again. Repeat until both burners are ignited. To check if the booster burner is activated, view through the small inspection hole behind the control box.

Ensure all parts of the pizza oven (including the stone) have completely cooled down before cleaning. To clean the exterior, wipe with a soft cloth and mild soapy water; do not use abrasive cleansers, scouring pads or grease removal products. To clean the inside of the oven, first remove the pizza stone and wipe the inner stainless steel surfaces with a soft cloth and mild soap or cleanser. Do not attempt to clean the pizza stone with water, especially when still warm or hot, as it can crack. Instead, simply wipe the cooled stone with a clean dry cloth as needed to remove surface residue and store dry between uses. Witt recommends wiping the screen with a clean cloth and storing it indoors between uses using the included carry pouch. Do not use water or soapy liquids to clean electrical connections or indicators.
