Grown in California and named after Italian culinary icon Marcella Hazan, these creamy white beans are from Italian Sorana seedstock. Sorana is a cannellini bean with incredibly thin skin and super-creamy texture. They cook up buttery soft and silky without falling apart. Their superior texture and quality make them a definite favorite for us. We especially like Rancho Gordo as a purveyor, as they’ve made it a priority to preserve culinary traditions and re-introduce indigenous beans from the Americas to the U.S. marketplace.

Use in place of Italian white beans for stews, braises, dips and soups. Use 1½ cups of cooked beans for recipes that call for one 15 ounce can of beans. We love them in our Turkish White Beans with Tomato, White Beans with Rosemary and Thyme, and White Beans with Sage, Garlic and Fennel.

A tribute to Marcella Hazan. Steve Sando was stunned one day to receive an online order for beans from one of his culinary icons.

Over time, he and Marcella developed an online correspondence, and he asked what beans she missed the most from her time in Italy. When she told him Sorana, a cannellini bean he’d never heard of, Steve and his staff soon hunted it down. Sadly, Marcella died before she was able to try the first harvest, so Steve named the bean “Marcella” as a tribute. “Marcella would get a kick out of your naming the bean after her,” said her husband, Victor. The first bag out of the field went straight to him.
