Giorgio Cravero’s Riserva Parmigiano Reggiano is in a league of its own, and for years, there’s only been one place in the States you could get it: Boston’s Formaggio Kitchen. But now there are two. Through an exclusive partnership, Milk Street is offering 2.2-pound wedges of G. Cravero’s 3-year aged Riserva, hand-cut to order by Formaggio Kitchen’s cheesemongers and shipped directly to you. This Parmigiano is rich, deeply savory and studded with crunchy crystals (known as tyrosine), yet the consistency is surprisingly softer and almost creamier than other Parms. So how do they pull it off? It all comes down to discernment, experience and attention. For five generations, family-owned Giorgio Cravero has selected the finest wheels of young cheese from Emilia-Romagna creameries, then meticulously aged them in a temperature- and humidity-controlled environment in Bra. They attend to each wheel—turning them more frequently than other affineurs (cheese agers)—which retains more of the cheese’s moisture content and prevents it from hardening too quickly. The result is an excellent Parmigiano Reggiano with all the depth of flavor you expect from a hard aged cheese, but none of the overly crumbly, dry texture. We recommend serving it simple: Break it into chunks with the tip of a knife and enjoy on a cheese plate with a glass of sparkling wine and perhaps a drizzle of good Italian balsamic.

The legendary Boston gourmet food shop is the only American retailer that carries this 3-year Riserva Parmigiano Reggiano; in fact, each wheel they sell is specifically hand-selected for them by Giorgio Cravero prior to aging. You’ll receive a hefty one-kilogram (2.2-pound) wedge, hand-cut to order and shipped straight to your door. The ordering window for our first limited drop closes midnight Sunday, May 24, or earlier if we sell out. Orders begin shipping on Tuesday, May 26.

This cheese’s flavor and texture are best at room temperature, so be sure to remove it from the refrigerator 30–60 minutes before serving. For the best texture, break the cheese into chunks using the tip of a chef’s knife or grana knife. (If it appears to be dry, lightly scrape the cut interior surface.) Large wedges can last up to 6 months with proper storage; if mold develops on the surface, scrape it off or cut out at least 1 inch of the affected area.

To store the cheese, wrap it first in parchment or wax paper, then loosely in foil or specialty cheese paper. Avoid plastic wrap when possible; cheese is a living, breathing thing, and plastic shortens its life span by trapping moisture, thus increasing the chance of mold growth and imparting an off flavor. Keep refrigerated in a slightly humid area with minimal airflow (like a cheese drawer) and rewrap after each use to maintain the balance between moisture and circulation.

Founded in 1855 by Giorgio Cravero, this family-owned business has been passed down from generation to generation and in that time, the only thing that’s changed is the aging environment. While underground caves are undeniably cool, they’re too finicky for consistent production. These days, G. Cravero uses a climate-controlled warehouse. The rest of the old-school process is just as the original Giorgio left it: Affineurs hand-select the absolute best young cheese from Emilia-Romagna and age it on pinewood shelves, turning each wheel frequently and meticulously monitoring its progress.
