Founded in 1855 by Giorgio Cravero, this family-owned business has been passed down from generation to generation and in that time, the only thing that’s changed is the aging environment. While underground caves are undeniably cool, they’re too finicky for consistent production. These days, G. Cravero uses a climate-controlled warehouse. The rest of the old-school process is just as the original Giorgio left it: Affineurs hand-select the absolute best young cheese from Emilia-Romagna and age it on pinewood shelves, turning each wheel frequently and meticulously monitoring its progress.
