This lightweight Japanese paring knife is a great choice for detailed handiwork and prep jobs in the kitchen and on the go. The paring knife features a defined sharp tip for scoring and a shorter wood handle that feels comfortable when doing controlled cuts, turning and peeling. Its craftsmanship is no surprise—Japanese company Suncraft’s in-house artisans have over 70 years of experience forging blades in Seki City, a famous knife-making area of the country. Designed with a strong stainless steel blade and sturdy handle, the paring knife won’t snap or bend, unlike cheaply made, flimsy versions. It’s great for small tasks, such as trimming mushrooms, peeling and chopping fruits and citrus, dicing and mincing shallots or garlic, slicing chives and scoring meat and veggies.

The paring knife comes with a magnetized cherry wood saya (guard) that simply slides on or off with a pop of the thumb; it protects the blade—and your fingertips—in a crowded drawer or knife roll. Keep it in your kitchen rotation or bring it to picnics, camping trips, parties, barbecues and other places you’d need a compact, sharp blade.

Use it to trim mushrooms; mince and dice shallots and garlic; slice citrus, herbs or cheeses and peel fruits like apples or pears. When done, slide the magnetic saya on to the washed and dried knife before storing.
