Unlike the tooth-cracking nut brittles of your childhood, this Persian version fractures delicately and practically melts in your mouth. Inspired by Iran’s sohan-e Qom—a traditional treat once served in royal courts of Qom during the Qajar Dynasty—this brittle is made by cooking butter, sugar and wheat sprout flour down to a rich syrup. Confectioners will generously mix in whole pistachios, aromatic cardamom and vibrant saffron. Landing somewhere between the texture of snappy toffee and buttery shortbread, the brittle offers a balanced sweetness, as the creamy butter and earthy pistachios mingle with the bright, floral notes of the spices. Two 6.76-inch disks of brittle are packaged in a reusable pink tin decorated—both inside and out—with Persian flower and butterfly illustrations by Iranian artist Hamid Rahmanian.

Royally Good Brittle (Literally)

While brittle, or “sohan” in Persian, is now a symbol of Iranian hospitality, its history began in the 19th-century courts of the Qajar dynasty. Legend suggests the brittle was created to celebrate a major national milestone: The grand unveiling of a new courtyard at the Shrine of Fatima Masumeh in Qom. To honor the occasion, local bakers served the brittle to Persian king Naser al-Din Shah Qajar following a massive royal banquet. Amused by its digestive properties, the monarch jokingly remarked the brittle cut through his heavy meal like a sohan (a metal file), thus giving the confection its name.
