Mario Pojer and Fiorentino Sandri slow-age their vinegar in oak barrels for up to two years, using a carefully selected “mother vinegar” culture that ensures consistent quality. Their trend-setting winery is known for reviving rare local grapes in their area and showcasing them in vinegars.
