Marsh Hen Mill deals only in heirloom grains, which they grow, harvest and process in small batches. Their practices preserve farmland and rare grain varietals for the next generation while also delivering the best results: cornmeal that actually tastes like corn. (Their products are always free of GMOs, artificial colors or flavors and preservatives.) We put their classic yellow cornmeal to the test with several batches of skillet cornbread and were consistently impressed by its aroma, depth of flavor and plush crumb. But this isn’t just for cornbread. The cornmeal is ground finely enough to use in cookies and cakes, or as a dredge for fried fish and onion rings. However you use it, you’ll get a pleasant bite and lots of true corn flavor.

Marsh Hen Mill founder Greg Johnsman learned his trade from a third-generation miller whose teachings live on in every bag of small-batch, stone-ground grits, rice and cornmeal. Johnsman and his team use traditional farming practices to grow rare heirloom varietals at risk of being lost to time. They then sustainably harvest and mill their crops using old-school techniques and equipment, including one circa-1847 mill.
