Too often, canned smoked fish is overly salty, swimming in oil or so smoky it obliterates your palate (not to mention whatever you’re eating it with). But this smoked tuna from Oregon-based Local Ocean is different. We were impressed by its subtle smokiness, which brings out the tuna’s natural savoriness without compromising flavor. The salt level is just right and there’s no water or oil to interfere with the tuna—just line-caught, hand-filleted Oregon albacore, gently smoked and canned in its own natural brine. The texture and savory profile means it’s a great choice for all sorts of meals, like salads, tartines and sandwiches, pasta and more.

Local Ocean works with fishing families who catch tuna with an old-fashioned hook and line, which is more sustainable than large-scale net fishing and allows anglers to select smaller, younger fish that are naturally low in mercury. The company’s ethos carries through to the cans themselves, which are plastic-free and labeled with the name of the fisher who caught the tuna, plus the location of the catch. With each can weighing a generous seven and a half ounces, there’s plenty for two people.

This subtle smoked tuna won’t overpower other ingredients, making it a fit for our Sugar Snap and Radish Salad with Olive-Oil Tuna, Spanish Potato Salad with Tuna and Eggs (Patatas Aliñadas) and Potato Salad with Capers, Olives and Olive-Oil Tuna. It adds extra dimension to pasta dishes like our Linguine with Tomatoes, Olive-Oil Tuna and Toasted Breadcrumbs. Of course, it’s great mixed with a little mayo and squished between two pieces of white bread.
