New York-based chef Chitra Agrawal started Brooklyn Delhi after being continually disappointed by the achaar sold in grocery stores, finding them heavy in salt, oil and preservatives. Her small-batch achaars, inspired by the authentic Indian pickles she ate as a child, are vibrant, complex and made with fresh, local produce for bolder flavor.
