Bronte, which sits in the foothills of the Sicily’s volcano Mount Etna, is a quaint village known for its sweet, fruity pistachios, nicknamed “green gold.” These pistachios—which are only picked from trees every other year and given Protected Designation of Origin (DOP) status—are the star of Aledi’s Pistachio Colomba, a festive, pillowy bread not unlike the softest brioche you’ve ever had. This panettone is baked in the shape of an Easter dove, or “colomba di Pasqua,” per the Italian legend of how King Alboin invaded Pavia in 572. When he conquered the fortified castle, the surrendering party offered him a dove-shaped sweet bread as a symbol of peace.

Each bird-like panettone is raised with sourdough and naturally leavened for 56 hours. The Colomba is filled with a smooth pistachio cream, glazed and given a generous sprinkle of those world-famous pistachios.
