The single-estate family farm employs around 60 nomadic Bedouin families, along with locals who tend to 215,000 olive trees. The grounds resemble a vineyard, where trees are capped at 7 feet and planted close together to increase efficiency and yield. The family also is committed to using sustainable practices such as composting, utilizing solar power energy and recycling used water.

HOW TO USE

​Use anywhere olive oil is needed–it works equally well as a cooking oil and a finishing oil. We like it especially for vinaigrettes, sauces and marinades, sautéing vegetables or meats, and for serving with bread and cheese for dipping.​

Kitchen Notes

This bold lemon-olive oil vinaigrette goes just as well on grains, chicken and seafood as a salad. In a small jar with a tight-fitting lid, combine ⅔ cup extra-virgin olive oil, ⅓ cup lemon juice, 1 teaspoon dried oregano and ½ teaspoon each salt and pepper. Seal the jar, then shake vigorously. Taste and season with salt and pepper.
