What if we told you there is a Japanese knife specifically designed for vegetable prep that will make your cooking safer, easier and faster? It is vastly better than the all-purpose European chef’s knife, which is clunky, heavy and too thick to precisely slice and dice onions, cut carrots into perfect coins or reduce chard into feathery ribbons. The solution is the Milk Street Nakiri. It’s light, thin and sharp, with a design that resembles a mini cleaver—2 inches deep with a squared-off tip. A very thin blade, just 1.6 millimeters at the top, tapers down even thinner toward the end so it slices through even tough ingredients effortlessly without bending. The broad blade shields your fingers when you chop and works as a bench scraper to transfer chopped veggies to the simmering pot. With the help of veteran industrial designer David Lewin, we added a few special touches. The blade is embossed with a nonstick file pattern that replicates the kourochi (blacksmith) or tshuchime (pear skin) finish to traditional nakiris, so sliced ingredients fall right off. A gentle curve accommodates fingers when choking up tight for control, and the handle has been designed to provide a nonslip grip.

Suncraft’s modernized 7-inch nakiri takes the classic Japanese blade’s typical rectangular shape and adds a soft, pointed tip for a uniquely useful knife. The blade’s geometry is more arced than a traditional nakiri, which makes it adept at mincing and rock chopping. Despite the curving blade, it retains a nearly consistent broad blade to the tip for finger safety and the ability to scoop chopped foods up to transfer to the mixing bowl or hot skillet. Suncraft’s classically styled “Senzo” line of knives feature AUS-10 steel blade, a tried-and-true knife steel that holds an edge well, is easy to tune up and is highly resistant to corrosion (though as with any knife, should be dried after use). The western-style handles are fashioned from pakkawood, a traditional handle material of wood stabilized with resins, which makes them impervious to water.

This unique serving spoon-knife combo tool is a must-have for serving. Right at the table (or the picnic blanket or the potluck), you can use the serrated edge to cut out your perfect portion of food and then use the dipped bowl of the spoon to easily scoop it into your plate. Most pepper mills (this model also grinds spices) take forever to grind just one tablespoon. This new design—which we developed with Kuhn Rikon—is easy to use and produces all the spice you need quickly. Its innovative back-and-forth ratchet action is simpler than a twist-style mill, especially for those with hand issues. The precision ceramic grinder is effective and durable, and the front-loading hopper is far better than top-loading grinders, where half the spices inevitably spill during filling. Perhaps our favorite feature is the removable bottom container, which makes it easy to measure and transport spices to a stovetop pot or mixing bowl.

We’re the first to admit that most small grills don’t work. It’s hard to get the charcoal started, it’s hard to control the heat and it’s hard to manuever them because of so much heat in such a small area. This little charcoal grill is the exception to the rule. Not only is it easily portable, as it’s made from lightweight and durable steel, but its unique square shape allows you to distribute charcoal evenly and also have the optimum grilling surface area to squeeze in more steaks than a typical small grill. It’s made with a high-temperature finish with chrome handles, which stay cool to the touch even when the grill is in use. And the design of the firebox allows for enough airflow to start the charcoal, but the chimney-like shape protects it from wind as it lights. The grill grates are perfectly positioned, too—we were able to brown steaks quite nicely without burning them. moHA!: Ginger Grater
The moHA! ginger grater has blades that are arranged in all directions for steady grating, as opposed to a one-directional rasp grater. But like with a wand-style rasp grater, moHA!'s cutting surface is made of sharp and durable precision-cut stainless steel. When you rotate the device, an integrated cleaning arm sweeps in a circular motion to scrape shavings off the blade, so all of the grated food ends up in your recipe, not stuck in crevices. A small compartment catches food shavings, for less mess and easier measuring; plus, the concave sides are comfortable to hold and allow you to keep a firm grip on the grater during use. The moHA! Ginger Grater has pieces that detach easily for cleaning, but the device stays together during use. When you're done using it, simply disassemble and toss it in the dishwasher.
