While many people associate coconut with sweet summery cocktails, this syrup from Liber and Co. is nuanced enough to work across seasons. Liber and Co. start with coconut meat—toasted until warm and nutty—which they round out with cold-pressed lemon oil, rosemary extract and a hint of salt for deep, lush flavor that pairs perfectly with barrel-aged spirits. Instead of one-note and overly sweet, this cocktail syrup achieves real coconut flavor without any artificial flavorings; try it on desserts or stirred into cocktails (especially piña coladas) or other beverages. While the syrup has a fairly creamy texture, storing it in the fridge may cause small pieces of coconut or bits of coconut fat to solidify—warming it slightly before use restores its texture. The 17-ounce bottle is larger than many widely available syrups, so you’ll get more out of a single bottle.

NOTE: Your Toasted Coconut Syrup bottle may arrive with the coconut fat hardened at the top of the bottle. This is totally normal and a natural property of coconut fat. You can warm the bottle in hot water and then shake to combine.
