Milk Street spices are sourced from around the world, many of them directly from growers we have met during our travels or through the best possible sources we can find. For spice blends, Milk Street develops its own recipes in-house and then has these blends made to order.
This collection of 6 spices represents the key items that you probably do not have in your pantry but should. Sichuan Peppercorns are the seeds of the pickle ash, not true peppercorns, and they offer a lemony and uniquely numbing effect on the palate. Smoked Paprika is one of the most useful spices in your pantry, made from chiles smoked over a wood fire. Urfa Pepper is soft, moist and has a chocolatey taste without too much heat. One of our favorite spices, it is great on eggs, grains, vegetables - almost anything. Sumac is an essential Middle Eastern spice made from dried red berries. It is both lemony and sour and is used liberally with chicken and eggs among other things. Sichuan Salt is our own Milk Street blend and includes Sichuan peppercorns, 5-spice powder, white pepper and sugar. Finally, our rendition of Za'atar is punched up with Aleppo pepper, sumac and garlic for a complete one-stop seasoning.
