With a combination of sweet, tangy, warmly spiced and smoky flavors, this small-batch tomato jam hits all the requirements for your next cheese board. When crafting it, Three Little Figs chef-owner Liz Cowan took inspiration from her time living in Spain, where she enjoyed good tapas and real pimentón. The tomato jam is made with organic Roma tomatoes, which are cooked until jammy with cane sugar, and a host of seasonings like key lime juice for lift, Spanish pimentón for smoky depth, fresh ginger and jalapeños for a little kick and fragrant cumin to tie everything together. This is not just for cheese and charcuterie, either—we love the jam with roasted meats, grilled fish and even on a grilled cheese.
