The hills of Provence—a sunny region in southern France that borders the Mediterranean Sea—are flush with fields of lavender, tarragon, fennel, sage, savory, thyme, mint, oregano, rosemary, parsley and much more. Mix together any of these aromatic herbs and you’ll get herbes de Provence, a dried seasoning blend that evokes coastal, summery flavors. This version, hand-packed by Paris-based Aux Anysetiers du Roy, contains thyme, basil, savory, fennel seeds and lavender flowers—a blend that’s herbaceous, floral, earthy and slightly medicinal. The herbs especially elevate French and Mediterranean recipes, plus provide a great aroma when seasoning pork tenderloin, whole chicken and roasted potatoes. Packaged in a charming ceramic crock, the blend is a great gift for hosts or anyone who likes to cook. When done, you can repurpose the crock as a salt cellar or container for other herbs and spice mixes.

Wonderfully aromatic, the herbes de Provence pair well with roasts of pork, lamb, chicken or fish and roasted vegetables, such as carrots, potatoes, parsnips and other root veggies. We like to add the blend to marinated feta (it also works as a great seasoning in fresh tomato salads) or white wine pan sauces. In the heart of L'Ile Saint-Louis, one of Paris’ historic districts, you’ll find the famed Provençal restaurant Aux Anysetiers du Roy. Years ago, after dinner, each guest would leave with a gift: a crock of herbes de Provence prepared by Louis Lombard, allegedly the first chef to add lavender to the spice blend. Today, the restaurant-turned-company sells herbes de Provence—plus other custom blends of spices, mustards, vinegars, honey and more—in these charming jars.
