<p>The Suncraft Senzo Paring knife is an absolute favorite of the Milk Street kitchen team for both its functionality and aesthetics. The 3.5-inch blade (slightly taller than most western blades) is forged from three layers of SG2 steel, a high-end material produced by blending and heating a fine-tuned mix of elements to create a remarkably hard steel that holds a sharp edge. Like all of Suncraft’s Senzo professional series knives, the paring knife has a classic Japanese 15-degree angle and finely polished finished, so the blade can cut extremely thinly without great pressure or effort. <br><br> The knife is finished with a subtly oversized western-style pakkawood handle. It’s laminated so that it’s ultra durable, and it fills the palm for a secure grip—regardless of hand size—for confident knife work.
