This Pacific albacore tuna is caught and canned often within the span of a day, so its freshness rivals the European quality but at a much lower price point. Unlike supermarket tuna, which can be mealy or soggy, CS Fishery's product is wonderfully dense and flaky—you can tell this is tuna meat. The fresh, mild and meaty fish is packed in olive oil and seasoned with Jacobsen sea salt, made from the same waters from which the fish are caught. This is premium American tuna—with a clear supply chain—at a reasonable price.
Graza Co. Squeeze "Drizzle" and "Sizzle" Olive Oil Set
Enjoy the best of both worlds with Graza’s “Drizzle & Sizzle” combo pack of extra-virgin olive oils. Grown and made in Jaen, Spain, the country where about half the world’s olive oil is produced, Graza uses 100% picual olives for both their blends of extra virgin olive oil. Mutti Tomato Paste is tomato paste as it was originally intended. Traditionally, this ingredient was made by drying tomato sauce on wooden boards in the sun; likewise, Mutti's modern version has a sun-dried flavor and caramelized richness reminiscent of molasses. Yet the tomato paste is not overly sweet—as tomatoes cook, their amino acids break down, which produces savory umami compounds. Villa Jerada Harissa
Villa Jerada’s Harissa No. 1 is our favorite version of this North African red pepper paste for its bright, complex flavor. While many store-bought varieties have a one-dimensional spicy flavor, this harissa layers acidity and fruitiness with preserved lemons, a touch of vinegar and tomato paste for a lively, tangy condiment. Villa Jerada uses just enough high-quality Moroccan olive oil to make the harissa spreadable and smooth without diluting its flavor, as opposed to conventional brands that contain a high proportion of water and vegetable oil.
Mount Mansfield Bourbon Barrel Aged Maple Syrup
This malty maple syrup is made from Grade A Amber Rich syrup before being aged for two and a half to three months in charred oak bourbon barrels from a small craft distillery in Chicago. Though lighter in color compared to the Grade B, the sweetness of the pure Vermont syrup is balanced beautifully by dark bourbon flavor, which comes through clearly, along with strong whiskey notes that spread across your tongue. The flavor lingers too, leaving behind a touch of leather from the oak barrel and a faint tingle from the whiskey burn.
Huilerie Beaujolaise Calamansi Vinegar
We absolutely love this small-batch vinegar from French artisanal producer Huilerie Beaujolaise. With a bright and tangy vibrancy akin to tangerine, this vinegar almost tastes like a shrub, or drinking vinegar. Ubiquitous to Filipino cuisine, calamansi is a citrus hybrid between kumquat and mandarin orange.
Maalouf Authentic Extra-Virgin Olive Oil
Stone-milled exclusively from a single grove of small, slender Souri olives grown in North Lebanon, Maalouf's early-harvest oil possesses a potent green-yellow color and a buttery, rich flavor with hints of green apple and artichoke. It has a subtle peppery kick and addictively long, nutty finish. This is truly an all-purpose, extra-virgin olive oil without the overpowering bitterness that mars many other brands. We have a very limited inventory of this small-batch oil; once we're sold out, we can't get more until next year's olive harvest.

I discovered this Pomegranate Molasses from Mymouné through a Cambridge restaurant called Moona; the Lebanese company makes all of its products by hand in small batches, and their pomegranate molasses is the sharpest and brightest I have ever tasted. The bottle will last a long time, and it is so much better than the sweeter, less balanced supermarket products. The first ingredient in this Pomegranate Syrup by Blossoms Syrup is real pomegranate fruit juice concentrate, so the syrup actually tastes like pomegranate, not a laboratory formulation of what pomegranate should taste like. We especially love that Vain Vanilla leaves its vanilla pods in the bottle, which has two benefits. First, over time the extract will continue to deepen in color and become more complex as the pods release more flavor compounds. Second, when you're done with the vanilla extract, you can still slice open the pods and use the beans themselves in your desserts.
